VEGETABLE PULAO


Ingredients

Pulao rice – 500 gm
Peas – 120 gm
Beans -                 120 gm
Carrots – 225 gm
Cauliflower – 60 gm
Tomatoes – 120 gm
Onions – 120 gm
Cardamom – 3 gm
Cloves – 3 gm
Bay leaf – 3 gm
Cinnamon – 3 gm
Peppercorn – 3 gm
Salt – To taste
Fat – 100 gm
Vegetable stock or
Water – 1 litre

Method

1.       Shell peas
2.       Peel and cut carrots into long slices
3.       Break cauliflower into small particles. Slice onions
4.       Wash and drain rice
5.       Heat fat. Fry onions till crisp and remove
6.       Fry vegetables slightly and remove
7.       Add whole spices and rice, fry well
8.       Add vegetable stock or water. Add salt and cook
9.       When rice is three-fourths cooked, make a well in the centre. Add vegetables, cover and cook on a slow fire with live coal on lid or covered in a slow oven
10.   Cook till rice and vegetables are tender

11.   Mix well and serve hot. Use fried onions to garnish
